Crozier Blue

Sheep's Milk

Ireland's only sheep's milk blue cheese, crafted by the legendary Grubb family at Cashel Farmhouse Cheesemakers in County Tipperary. This cheese delivers richer complexity than its famous sibling Cashel Blue. Expect sweet and salty notes with toasted nut undertones, a peppery blue kick, and an exceptionally lush, creamy texture that develops beautiful depth with age.

Serve with honey, pears and Sauternes. 

Dunmanus

Cow's Milk

A semi-hard washed-rind cheese from pioneering cheesemaker Jeffa Gill at Durrus Cheese in West Cork, Jeffa has been one of Ireland's earliest artisan cheesemakers. Made with milk from local West Cork herds and matured for five months, this cheese captures the elemental beauty of the Sheep's Head Peninsula. Earthy, complex flavors develop under the natural rind – a taste of West Cork's ancient farming land in every slice. Serve with crusty bread and fuller-bodied white wines.

Baking Cooleeney

Cow's Milk

A special 200-gram wheel designed specifically for the oven! Made from pasteurized cow's milk by the fourth-generation Maher family at Cooleeney Farm in County Tipperary, this white mold beauty reaches full maturity at 8-10 weeks and transforms into a lusciously creamy, buttery pool when baked. Simply pop the whole wheel in its rind and its dish into a hot oven and watch it melt into liquid gold. A guaranteed showstopper for any gathering.

Serve straight from the oven with crusty bread and sparkling wine.
